Different Heat Ranges on Plugs

    I've gone from heads with water to billet hemi and I am wondering why there are different heat ranges if there is no water to pass the heat into? We were using -10 and I never tried a -11 to see if the EGT showed a change, now I am wondering if it would.
    Whats the story?
